Ingredients
- 1 Tablespoon canola oil
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped habanero pepper (seeded)
- 1 teaspoon granulated garlic
- 1/2 pound ground Veal
- 1 tsp cornstarch
- 1/3 cup beef broth
- 1 pkg (8oz) cream cheese, cubed
- 3/4 cup Sharp Cheddar Cheese
- 1/2 cup sour cream or sub ½ cup plain Greek yogurt
- 3 Tablespoons chopped fresh parsley
- 1 bag tortilla chips of choice
- Optional garnish: tomatoes, cheese, scallions
Instructions
- In saucepan, heat oil over medium heat and cook onion, pepper and garlic for about 5 minutes or until softened. Add veal and brown, stirring and breaking up with spoon for about 8-10 minutes or until no longer pink.
- Whisk cornstarch into beef broth and stir into veal mixture. Cook, stirring for 1 minute. Add cream cheese and cheddar cheese and stir until melted. Stir in sour cream and parsley and heat through.
- Serve with tortilla chips of choice
