Ingredients
- 1 Tbsp. olive oil
- 1 lb. ground veal
- 2 cloves garlic, minced
- 2 oz. taco seasoning
- 12 oz. tortilla chips
- 1/2 cup corn kernels
- 1 cup shredded cheddar cheese
- 1 cup diced cherry tomatoes
- 1/4 cup diced red onion
- 1 thinly sliced jalapeno
- 2 Tbsp. Greek yogurt
- 2 Tbsp. chopped fresh cilantro leaves
- 1/2 sliced avocado
Instructions
- Preheat oven to 400 degrees F.
- Heat olive oil in a large skillet over medium high heat.
- Add ground beef and garlic – cook until beef has browned (about 3-5 minutes). Stir in taco seasoning and allow to simmer for a minute. Drain excess fat.
- Place tortilla chips in a single layer onto the prepared baking sheet covered in aluminum foil.
- Top with ground veal mixture, corn and cheese.
- Place into oven and bake until heated through and the cheeses have melted (about 5-6 minute).
- Prep your toppings as the cheese melts.
- Remove sheet from oven and top with prepared tomatoes, red onion, jalapeno, avocado, cilantro and Greek yogurt
