Ingredients
- 1 1/2 tsp. chili powder
- 1 1/2 tsp. instant coffee powder
- 1/2 tsp. brown sugar
- 1/4 tsp. dry mustard
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/8 tsp. black pepper
- 2 bone-in veal chops (about 1 inch thick)
- 1 Tbsp. olive oil
Instructions
- Preheat oven to 375*.
- In a small bowl, whisk together the chili powder, instant coffee, brown sugar, dry mustard, garlic powder, salt, and pepper.
- Pat the veal chops dry with a paper towel. Generously sprinkle the spice rub over both sides of each chop.
- Preheat a large, non-stick skillet over medium high heat. Add the olive oil and then sear the veal chops for about 1 1/2 minutes on each side or until a golden crust forms.
- Finish cooking the veal in the oven at 375* for about 10 minutes or until they reach an internal temperature of at least 145*F.
- Allow the meat to rest for a couple of minutes before serving
